Spring Fling

This year’s spring dinner was toasted in with the threat of snow! Perhaps instead of “Spring Fling,” we should have titled it, “Hey Baby, It’s Cold Outside.” Although it was chilly outside, we stoked up the fire inside, slowly stewed the Rabbit Ragout, and poured our guests some of the Chateau’s most heart-warming wines.

Executive Chef Janet Hedstrom invited Head Winemaker Bob Bertheau to select the wines, while she created some very innovative dishes to showcase them -- from Strawberry Risotto to Indian-spiced Halibut with English Pea Puree & Pistachios. We had such a lovely time, we forgot all about the impending snow. (Well, except for poor Kurt, who was grilling lamb spiedini outside singing, “Stormy Weather.”)
